Ingredients

  • 1/4C Butter
  • 1 Sweet Onion
  • 2 Cloves Garlic
  • 1 28oz can San Marzano Tomatoes
  • 1 C Chicken Broth
  • Basil
  • 4 Fresh tomatoes
  • 1 C Heavy Cream
  • 1 C Parmesan
  • Salt
  • Pepper
  • Sugar to taste
  • Smoked Gouda
  • Gruyere
  • Sourdough Bread

Directions

Tomato Soup

  1. Melt butter and saute onions and garlic
  2. Add canned tomatoes, chicken broth, basil and pepper
  3. Boil a large pot of water and blanch four fresh tomatoes and remove skin
  4. Add your fresh tomatoes to the soup pot
  5. With an immersion blender, blend ingredients until desired consistency is reached
  6. Mix in heavy cream, fresh parmesan, salt and sugar to taste
  7. Cover and let simmer to allow flavors to marry.
  8. Serve in a bowl topped garnished with basil and topped with fresh parmesan

Grilled Cheese

  1. On a large pan with medium heat, toast some buttered sourdough bread until golden.
  2. Shred some smoked gouda and gruyere cheese
  3. Place on bread and cover the pan and allow to melt under low heat. Be careful not to burn bread.
