Ingredients

  • 3 Sweet Potatoes
  • Peanut Oil (Enough to deep fry)
  • Sugar
  • Cinnamon
  • Salt

Directions

  1. Start by peeling the skin of the sweet potatoes and remove any defects. It is okay to leave some of the skin on.
  2. If you have a mandoline you can use it to cut your fries, or just use a knife. Use extreme caution if using the mandoline, as sweet potatoes can be difficult to cut.
  3. Place the cut fries in a large bowl of water and rinse.
  4. Line a cookie sheet with paper towel and spread your wet fries out to dry. (Let dry for 15 minutes or so)
  5. While the fries are drying, heat up your peanut oil to 400F in a large pot or deep fryer if you have one available.
  6. Line another cookie sheet with paper towel
  7. Deep fry the sweet potatoes for a couple minutes and then pull them out and place them on the lined cookie sheet
  8. Let the oil heat back up to 400F and then proceed to fry a second time. (This won't take long. About 30-40s)
  9. Pull the fries out and top with sugar, salt and cinnamon.
