I got a little recipe you should know, That’s why we’re making sourdough. You can eat it in the morning, you can eat it for lunch. You can eat it in the evening, just eat it and munch. And it tastes real good with cheese on top. A little jalapeño too if you're feeling hot. Just put it in your mouth, it’ll warm your soul. It’s the crispy crunch crust that keeps me swole. And I think about it all the time when it's gone. Yeah, my mood gets sad and I sing this song. When I pull the starter out, I start feeling better. It's like a ray of sunshine in the rainy weather. It's like the yeast in the air just lifts my spirit. When we pull it out the oven, don't even get near it. Cause you gotta let it rest, just take things slow. So grab a little flour, let's make this sourdough.

Ingredients

  • 520g Bread Flour
  • 12g salt
  • 385g water
  • 90g sourdough starter
  • 1 Jalapeno
  • 1/2 cup extra sharp white cheddar cheese

Directions

  1. Feed starter and let double in size for at least 6 hours
  2. In a large bowl combine flour, salt, water and sourdough starter. Stir with a wooden spoon and let rest for 20 minutes.
  3. Knead the dough for 5-7 minutes
  4. Proof overnight in a covered container
  5. Add the Jalapeno and cheese to the dough. Knead again for a few minutes and then proof in covered container for about 4 hours.
  6. Knock the dough back and proof for a final time. (4hrs)
  7. Place dough in the fridge uncovered.
  8. Score the dough
  9. Bake @500F for 20 minutes in a dutch oven covered
  10. Uncover until it reaches an internal temp of about 205F
  11. Let rest for an hour
