Ingredients

  • 1 Bunch Green Onions
  • 2 Cloves Garlic
  • 2 T Sesame Oil
  • 3 T Fish Sauce
  • Sriracha
  • 2 T Tamarind
  • 2 T Peanut Butter
  • Salt
  • 1/4 tsp Ginger
  • 1/4 tsp Chipotle Powder
  • 3 T Sugar
  • Flat rice noodles
  • 1 Cup Sprouts
  • 1/2 Cup Cilantro
  • 1/2 Cup Peanuts
  • 2 Chicken Breasts
  • 2 Eggs
  • 2 Limes

Directions

  1. Saute 1/3 of your green onions with garlic and sesame oil until fragrant
  2. In a small bowl combine fish sauce, sriracha, tamarind, peanut butter, salt, ginger powder, chipotle powder, and sugar
  3. Combine with your sauteed onions and garlic
  4. Cook rice noodles according to package
  5. In a small bowl combine the remainder of your green onions, sprouts, cilantro and peanuts.
  6. In a wok, fry chicken that has been marinating for at least a few hours. (preferably overnight) The marinade I used for this was fresh lemon juice, olive oil, sriracha, salt and pepper.
  7. Scramble two eggs and fry in wok.
  8. Add noodles, sauce and cooked chicken and toss.
  9. Top with your mixture of green onions, sprouts, cilantro and peanuts
  10. Squeeze some lime on top to finish it off!
